Fruit, freshness and complexity are the three main virtues that characterise Brut ReservaSegura Viudas. The fruit and freshness come from the careful handling of the grape, as it is 100% harvested by hand and transported in cartons of 25 kilos to prevent the grain from breaking and the must from oxidizing, resulting in a loss of freshness. The complexity is due to a special preparation consisting of the autolysis of the yeasts with the base wine during 3 months before bottling and a second autolysis of the yeasts during at least 15 months of storage in the bottle.
IN THE VINEYARD
The grapes for the Brut Reserva come from a variety of vineyards in the region. In this way you can take advantage of the particularities of each area to obtain a complex and harmonious cava.
IN THE WINE CELLAR
Pressing the whole grape to preserve the identity of the product and avoid oxidation. Natural decanting of the must for 24 hours to obtain more fruity and elegant wines. The first and second fermentation takes place with selected yeasts, which provide structure, smoothness in the mouth, more complex aromas (honey, nuts, flowers) and an elegant and persistent bubble. The coupage comes from 10 different wines, four of which follow a maturing process in which the yeast is aged 3 months after fermentation. At least 15 months in the bottle, in total darkness and silence, 20 metres underground and at a constant natural temperature of between 14 and 16 ºC.
IN the CUP
Elegant and persistent bladder. Aromas of white, tropical and citrus fruits and moderate floral notes. Its taste is exquisite, complex and tasty, with good acidity and a taste of lime and pineapple. Dry mouth and good persistence on the palate.
On the table
Ideal Cava for the beginning of a meal, faithful friend of jams (mussels, cockles, anchovies), ideal also with pasta, as well as with warm salads. Surprising with soft sheep cheese such as cakes (Casar, Serena, Pyrenees, etc.) thanks to the fair dosage of 9 grams of sugar.
It is pleasing in the glass because of its straw-yellow colour and fine pearling. On the palate it is spicy and dry; the fruity, refreshing bouquet is dominated by notes of tropical fruits (pineapple, lime) and floral notes. The Premium Cava, which has been stored on the yeast for at least 15 months, has an invigorating acid structure that ensures a lot of freshness. The Spanish sparkling wine is a stylish aperitif. It also goes very well with seafood or fish pasta and is an excellent accompaniment for soft and mild cheeses such as brie.
