The Reserva Heredad was created to mark the style in the world of high-end sparkling wines. We develop it with the aim of offering an elegant and versatile cava from the best wines of each vintage, which later matures in the bottle in contact with the yeast for more than 24 months. The maturing process ends when the expert turns each bottle by hand, intensifying the contact of the yeast with the wine and creating a more complex Bouquet.
IN THE VINEYARD
100% of the grapes are harvested by hand and transported in 25 kg perforated cartons to prevent the grain from breaking and the must from oxidizing, resulting in a loss of freshness.
IN THE WINE CELLAR
The Heredad Reserve must is obtained by pressing the grapes more gently. We use only 50% of the must, the so-called flower must, because it is the most aromatic and delicate. The first fermentation takes place in stainless steel tanks at a controlled low temperature to preserve the primary aromas of the grape. The Reserva Heredad Coupage consists of 9 different wines, each vinified in separate tanks to ensure that each wine brings its characteristic note to the whole. Maturation for more than 24 months in contact with the yeast. The first and second fermentation takes place with our self-selected yeasts. These yeasts offer structure, smoothness in the mouth, more complex aromas (honey, nuts, flowers) and an elegant and persistent bubble. Before rinsing, we give a manual touch or wrist twist called "Poignettage", which loosens the yeasts from the inside of the bottle and mix them back with the wine, intensifying the autolysis process. Each Reserva Heredad bottle is rinsed or removed by hand and in desks.
IN the CUP
Yellow straw color, his bladder is small and well integrated. In the nose, the aromas of the ageing process in the yeast, with its smoked notes and notes of pastry, which at the end appear light notes of honey, fruit and petals. In the mouth it is excellent, fruity and tasty, with the presence of nuts from education, but very elegant, which leaves a feeling of fullness to anyone who enjoys it.
On the table
Fresh elegance, everything coincides in this cava, until its presentation, faithful companion of the dishes with truffles, in this case striped on different types of noodles. The white fish to the Meunière and also in the traditional Mediterranean stews is an ideal companion, also to the hams of the white pig and even to Iberian, creamy soft cheese pastes. With perfectly matching meat to braised venison fillet with Escaluñas compote and long etc.
