The Gran Cuvée Reserva is a new challenge for our oenologists, with the desire to show our support for old native grapes such as Macabeo and Parellada, our finest white grapes. A fresh, elegant and complex creation that only takes place when all climatic, Boden and harvesting conditions are met.
IN THE VINEYARD
The Macabeo and Parellada varieties are the result of very old and traditional vines, with a very low production and a fruit with a greater personality. Macabeo grapes provide fresh fruit, apples and pears. The Parellada variety gives finesse, freshness and subtle floral aromas that make the wine more characteristic and delicate. The Chardonnay grapes come from younger vines growing on trellises and provide aromas, body on the palate and clear acidity. Pinot noir grapes are harvested by hand to avoid printing and colour extraction. When the grapes arrive at the winery, they are immediately pressed to obtain a Blanc de noirs. This variety offers a delicious acidity and a full body.
IN THE WINE CELLAR
First fermentation in tank, at low temperature, between 14 and 16 °c, with selected yeasts, own and autochthonous. The Macabeo and Parellada wines are left to ferment with their yeasts for the second time before bottling and the Bâtonnage (mixing the yeasts of the tank with the wine) is produced, which improves the mouthfeel, the aromas and the ageing potential. The first and second fermentation takes place with our own yeast strains. At least 15 months storage in contact with the Bodenture, in absolute darkness and rest, 20 metres underground and at a constant natural temperature between 14 and 16 °c. The dosage is lower than usual to enjoy the personality and appetizing taste of the base wines.
IN the CUP
This cava is a good balance between the northern and southern influences that are found in the heart of our Mediterranean country. The result is a perfect combination of the ancient vines of Macabeo and Parellada, which bear fruit, elegance and finesse and blend perfectly with the richness of Chardonnay and the notes of wild berries of Pinot Noir. It is an ideal combination of soil, climate, grape aromas and a finished wine that matures 15 months in contact with the yeast. It is refreshing and fruity, rich and elegant, creating a perfect balance between fruit, structure, acidity and alcohol.
On the table
Complex in its harmony, there is an impressive variety of flavors and sensations that can be perfectly combined with all kinds of fish dishes, Peruvian and Mexican ceviches, soy cuisine, tempura, sauerkraut, stewed meats and the most advanced sushi cuisine. Also ideal with sautéed or pickled mushrooms, carpaccio meat, wild salmon, matured cheese and of course for cooking with virgin olive oil.
Excellent sparkling wine with very fine perlage, aged on the yeast for at least 15 months. Presented in glass with a brilliant golden yellow. Fruity, elegant and rich in finesse on the palate, pleasing due to its well balanced acidity. A stimulating aperitif and a stylish and expressive accompaniment to meat and fish dishes, which also harmonises very well with sushi, temper the wine well.
