Good oil sardines are a delicacy. Sardines of the variety Sardina Pilchardus are produced fresh and "A la Antigua". They are cleaned by hand, individually, and fried in virgin olive oil. Tinned sardines, such as white tuna, improve their taste over the years, becoming sweeter and more tender. Just like wine, you can set up a cellar of the Conservas de Bonito del Norte and Conservas de Sardinas, which will improve their quality and taste over time.
If this fish is fished on the Cantabrian Sea coasts and weighs at least 4 kg, it shall be labelled 'Bonito del Norte', which shall be recorded in a control mark indicating the date of disembarkation, the vessel that caught it, the date of disembarkation, the tester/inspection team. Port of disembarkation and food quality seal.
This seal guarantees this product and differentiates it from the specimens caught by French and Irish fleets with the "volanta" system, i.e. with long nets which, apart from not being very considerate with the other fish species, also have the disadvantage that the removal is very exhausting for the fish and thus impairs its quality.
