The Serrano ham matured in La Alpujarra, comes from the zone of the National Park of Sierra Nevada. Here the best hams from Trevélez are matured, hams that can no longer be included in the protected designation of origin (limited number) are then sold as "hams from La Alpujarra".
Alpujarra's Nevadensishams are naturally matured without additives, which is why this ham is made exclusively from ham and salt. An absolute natural product, quite the opposite of the hams that are mass-produced in large companies.
The existing environment, climate and vegetation allow the necessary development of the specific microbial flora. Thus, at 1,200 and 1,900 meters, where the hams of Trevélez are produced, are located the oaks and a high number of native plants of the Sierra Nevada. This area lies in the cold zone, with lots of snow in winter and cool temperatures in summer.
