The pig and its environment:
The suitable animals for the production of ham of this specific designation of origin are the pigs from crossbreeds of the Landrace, Large-White and Duroc-Jersey breeds.
Trevélez ham owes its exceptional flavour characteristics to the natural environment (medium-deep zone of the Sierra Nevada Natural Park) in which it is produced
The existing environment, climate and vegetation allow the necessary development of the specific microbial flora. Thus, over 1,200 and 1,900 meters, where the hams of Trevélez are produced, are the oaks and a high number of native plants of the Sierra Nevada. This area is in the cold zone, with lots of snow in winter and cool summer temperatures.
