Here are cured the best hams from Trevélez. The ham which cannot be recorded by the designation of origin (limited quantity) will then be sold as "Ham from La Alpujarra".
Our ham from Alpujarra are cured in a natural way without additives, that is why this ham consist only of ham and Salt. This is a purely natural product, quite the contrary to the ham which is produced in mass-production.
The environment, the climate and the vegetation allow the necessary evolution of the microbial Flora.
Consequently there ar at abou 1.200 and 1900 meters, where the Trevélez ham is produced, the oaks an a high quantity of native vegetables of the Sierra Nevada.
This area is situated in the cold area, with lots of snow in winter and cool in summer.
Ingredients: Shoulder ham and sea salt.
