The Salchichón Ibérico de Bellota from Beher reaches the highest quality level among Iberian sausages and may bear the label "?de Bellota". The juicy-oily, aromatic meat of the Ibérico pigs from acorn feeding gives this artisan air-dried sausage speciality its unique taste. In contrast to Spanish chorizo, salchichón is not seasoned with paprika and garlic, but with salt, pepper, nutmeg and coriander. The Salchichón is gently matured in dry kilns for several months, which gives it its firm structure and develops its exquisite aroma.
