P.D.O. Spanish smoked sheep's milk cheese Idiazábal 1 kg

Idiazábal is a town in the Basque province of Gipuzkoa. This hard cheese made from sheep's milk has been produced there for centuries and has been eaten in Spain with a DO designation of origin since 1987. Idiazábal and almost 10 years later throughout the EU.  The milk may only be used by the two breeds Latxa and Carranzana, which are very typical for this region.

Appearance and taste

The finished Idiazábal has a cylindrical shape and a weight of 1-3 kg. Idiazábal has a light yellow, smooth bark. This cheese is also available as a smoked variant with a yellow to brown rind.
The consistency is compact, semi-solid to hard, with only a few small holes and slightly drier when smoked.

The Idiazábal has a strong, pronounced spicy and slightly buttery flavour.

Dough is compact and semi-solid are hard, it has few, small holes. The colour is pale yellow, in smoked Idiazábal also brownish. The taste of Idiazábal is strong and pronounced, spicy and buttery with typical sheep's cheese aroma. The smoked version has a stronger taste and a pleasant smoky aroma.  Taste stronger, the aroma pleasantly smoky.


Ingredients: Pasteurized sheep's milk, milk ferment, rennet, calcium chloride, lysozyme from egg and salt, E 252 and E 1105.

Rind not suitable for consumption. The rind contains preservatives: E 202, E 235.

Fat content: at least 38% in dry matter
Gluten-free.
