Biodynamic agriculture is a further step in organic farming. It is based on the harmonisation of the different forces of nature: seasons, weather events, moon phases, etc.. Biodynamic agriculture seeks the overall balance between the Botrees, animals and humans.
Colour: Intense green
Nose: Grass and various vegetable aromas predominate in this fresh and expressive olive oil.
Palate: On the palate, the olive leaves, lettuce and artichoke are first noticed, followed by notes of fresh fruit, tomato plant and a hint of green banana. The bitter and pungent taste are very well integrated, with an astringent element which flatters the artichoke, thistle and persimmon. It is a harmonious and sustainable olive oil.
Serving suggestion: Particularly suitable for salads, tomato soup, gazpacho, ham and cheese and grilled meat.
Has a high content of polyphenols (760 ppm of which 436 are biofenols), high percentage of antioxidants.

Organic olives of the Picual and Arbequina varieties are used for the high-quality Bio Dynamic olive oils. In addition to the usual organic standards, the aim is to harmonise these products among the various forces that regulate nature: Seasons, atmospheric phenomena, moon cycles, as well as the cosmic constellation of stars. The aim of this type of cultivation is to achieve a comprehensive balance in relation to the Botrees, animals and mankind. The organic fertilizer is Castillo de Canenaproduced directly on site and the plant population is increased with the help of colonies of bees.
Cru oils from Andalusia
Castillo de Cañena is a family business of the Vanos family that has been producing high-quality olive oils for 250 years. The estate is located in Andalusia, not far from Jaen and is surrounded by its own olive groves. New in the assortment is the 1st of Harvest line, consisting of two oils of the olive varieties Picual and Arbequino. These strictly limited oils testify to the highest quality and year-round hard work in the olive grove. When perfectly ripe, they are harvested on the first day of harvest, processed immediately and thus have a very special freshness and fruitiness. The labels are designed each year by a different artist
The smoke olive oil from the xxi Century Oil Collection, which is frequently used in top gastronomy, is definitely an unusual product. For the elaborate production, wood chips made of birch, beech and oak are used for smoking.
