Olive oil of the Arbequina variety flavoured with hot chillies, garlic, coriander and cumin: this is the new Harissa olive oil from Castillo de Canena! Harissa has its origins in North African cuisine and is popular with creative chefs all over the world. A very versatile oil with complex aromas.
The oil is red/orange coloured and transparent. Organoleptic profile that corresponds perfectly in nose and mouth, but with the surprising natural spiciness of Cayenne in the latter.
In the foreground it presents roasted and spicy aromas of Cayenne, followed by spices, each of which, garlic, coriander and caraway, are perfectly identified in the aftertaste, in a balanced and intensified combination with the fruity and green aromas of the juice of fresh Arbequina olives.
It is also characterized by its flow properties and bitterness and its spiciness, which are in perfect harmony with the spiciness of this spice mixture.
Very structured due to the high oleic acid content. High endurance and harmony.
Serving suggestion: Grills, salads, pizza, ribs, chicken wings, sandwiches, chips, corn on the cob, hamburgers.

Castillo de Cañena is a family business of the Vanos family that has been producing high-quality olive oils for 250 years. The estate is located in Andalusia, not far from Jaen and is surrounded by its own olive groves. New in the assortment is the 1st of Harvest line, consisting of two oils of the olive varieties Picual and Arbequino. These strictly limited oils testify to the highest quality and year-round hard work in the olive grove. When perfectly ripe, they are harvested on the first day of harvest, processed immediately and thus have a very special freshness and fruitiness. The labels are designed each year by a different artist
The smoke olive oil from the xxi Century Oil Collection, which is frequently used in top gastronomy, is definitely an unusual product. For the elaborate production, wood chips made of birch, beech and oak are used for smoking.
