The ham from Guijuelo
In the south-east of the province of Salamanca, at an altitude of over 1000 metres, Guijuelo gives its name and resonance to the most important Spanish district for the butcher's trade of the Iberian pig.
The protection of the central system, the privileged microclimate with cold and dry winters and the short and mild summers, allow a perfect drying and ripening of the ham.
In this zone, in an incomparable microclimate, hundreds of craftsmen and their families produce the Jamón Ibérico Guijuelo,"unique in the world" every day.
There are 3 factors that determine the extraordinary quality of these hams:
1. an authentic Iberian breed which enjoys a natural feeding on acorn basis,
2. a suitable climate and
3. a traditional handcrafted maturing system.
