De la Vera paprika is a product with a smoky taste and aroma which is made intense and penetrating by the process of drying the chilies using smoke.
This paprika is a product with D.O.P. of La Vera and it is a result of the grinding of the red peepers of the varieties of Ocales, Jaranda, Jariza, Jeromín and Bola. This paprika is grown in the region of La Vera, province of Caceres, Spain.
The Pimentón de la Vera traditionally is valued for direct consumption and for processing sausages.
The regulatory board monitors and controls the growing and the production process and provides the numbered labels for the classified lots qualified for the designation of origin.
The Paprika de la Vera, accredited by the numerated label, is characterized by the aroma, flavor and stability of the color.
The aroma and the flavour its obtained by the traditional system of the drying process. The stability of the colour is consequence of the high grade of the fixation of the carotene that occurs in the pepper along the growing in the microclimate of La Vera and during the drying process.
