The Salchichón Ibérico de Bellota from Beher reaches the highest quality level among Iberian sausages and can bear the label "de Bellota". The succulent, oily, aromatic meat of the Ibérico pigs from Eicheluppterung gives this handmade, air-dried sausage specialty its unique taste. In contrast to the Spanish Chorizo the Salchichón is not flavored with peppers and garlic, but with salt, pepper, nutmeg and coriander. The Salchichón retains its firm structure and develops its exquisite aroma thanks to the several months lasting maturing in dry rooms.
