The ground paprika de la Vera, is a product with protected designation of origin, from the ground material of the varieties Ocales, Jaranda, Jariza, Jeromín and Bola. It is grown and processed in La Vera in the province of Cáceres, Spain. As Paprikapulver de la Vera is a product with a taste and aroma of smoke due to the drying process with smoke of the peppers. It has a red color with a relative luster. It has a high color strength which is the greatest in the Ocales and Bola variety. The taste, aroma and colour are very durable due to the slow dehydration process.
The paprika powder de la Vera has always been used for direct use or for the production of various sausages.
The Regulatory Board monitors and controls both the cultivation and the production process and grants the numbered labels for the selected batches approved for the designation of origin.
The paprika powder de la Vera, accredited by the numbered label, can also be distinguished by its characteristic aroma, taste and colour fastness.
The aroma and the taste are obtained by the traditional drying system with smoke. The colour stability is a consequence of the high degree of carotene binding that occurs in the pepper during cultivation in the microclimate of La Vera and during the drying process.
