Roncal cheese from the Roncal valley of the same name in the Spanish region of Navarre is protected by the d.o.p. Roncal designation of origin. Roncal cheese is made from sheep's milk, more precisely from the sheep breeds Latxa and Rasa.
Roncal hard cheese is a light to medium spicy hard semi-hard cheese which, according to DOP regulations, matures for at least four months.
In order to ensure the production process, but also the maturation and preservation of the product, the whole milk used must have a balanced fat and protein content and be free from colostrum. The strong rind on which you can see the remains of the mildew gives this particular cheese its blue/grey colour and velvety texture. The cheese is presented cylindrical with sharp edges and weighs between 1 and 3 kg.
The full and slightly pungent taste is typical of Roncal cheese and due to the fact that it is matured for at least 4 months, it is also very creamy.
Bark contains preservatives: e 202, e 235.
