Zamorano cheese, which has been protected by the Protected Designation of Origin since May 1993, is the only cheese from Castile and Leon to have been recognised by the European Union for this quality mark. Both production and processing are concentrated in the province of Zamora.
Zamorano cheese is obtained from two indigenous breeds of the province, the Churra sheep and the Churra Castellanasheep. The great peculiarity of these sheep breeds is that they were able to survive in a very harsh environment and with a very extreme climate. They are also located in an area where resources are not abundant, so these breeds are very efficient at obtaining the food they are able to transfer into the milk they produce.
The Zamorano cheese is the result of the combination of two of the most specialized indigenous breeds of sheep in milk production, the Churra and the Castellana, with a generally hostile environment, both because of the extreme climate and because of the not excessive abundance of pasty resources from which the Churra and those Castellanaare able to extract the quintessence and transfer it to the milk that will later lead to a cheese with deep Hispanic roots.
The authentic Zamorano cheese, such as the one we offer you, is marked with a casein plate and the back label of the Regulatory Rabbit, which is a Romanesque rosette and therefore an absolute guarantee of quality and authenticity.
